In 2005, we introduced a smarter oak alternative that delivers efficiency, economy, and elegancea product that fully extracts in weeks, not months, adds new oak impact at low cost, and integrates with wine with a refined quality that rivals an oak barrel. We engineered a low-cost method of forming a precision spiral cut into premium oak that maximizes grain exposure in a size small enough to fit through a bung hole. Our convection oven toasting permits optimal control of temperature exposure, timed for uniformity of depth. We contain and connect six Oak Spirals inside a food-grade, nylon mesh that makes insertion and removal clean and trouble-free. Oaked vs. Unoaked Wine: What's the Difference?

To say the difference between oaked and unoaked wine is all in the taste is, while accurate, a large over simplification. There are certain wines that oak just lends itself well to. Many red wines and a few white wines benefit from aging in oak. When wine ages in oak, the flavors become more complex, but it also impacts the smell and overall quality of the wine as well. Think of a winemaker using oak like a chef uses salt; you can add a little or a lot to change the flavor altogether or use less to just highlight certain flavors.

Unoaked wine tends to be lighter, fresher, and fruitier. There will be more acidity present in an unoaked wine. The color is more crisp and bright as well. In oaked wine the fruit is still there, it’s just blended with the other flavors from the oak itself. The flavors will be subtle but warmer. Think fruit with vanilla and spice.

Region can play a role in whether a wine is oaked or not. American wines, especially Chardonnays, are almost always oaked. This gives the Chardonnay a creamy, almost buttery taste. European Chardonnays are usually unoaked so they are crisper and brighter. If you’re making wine and want to give it that warm, bold flavor that can only come from oak, you need to try our Infusion Spirals. It’s oak aging but in a bottle!

Introduced in 2004, the Oak Infusion Spiral has set a new standard in oak alternatives. By cutting a spiral form out of premium oak stave wood, maximum surface area is created inside a small envelope. This results in a smarter, faster, more efficient way to give new, barrel-quality oak to wine, beer, spirit and cider – all at a reduced cost and timeframe. 

We applied the precision and consistency of convection oven toasting and created a product that delivers, arguably, the most barrel-like results of any oak adjunct on the market. The key is the spiral’s dual grain exposure of oak cross grain and parallel grain. It speeds submersion and extraction of flavor and aroma compounds into liquid. Inside our Infusion Spiral Barrel Pack, six 9-inch spirals are connected and neatly contained in food-grade nylon netting. And whereas chains of oak sticks require anywhere from seven to 14 links of oak, the Infusion Spiral has only five, making insertion and removal through the bung hole quick and hassle-free. 

To install, one end of the Infusion Spiral Barrel Pack nylon netting can be fastened to the bottom of a bung using a stainless steel eye screw (available separately) or tied to a non-wicking line fed through the bung hole and fastened securely to the outside of the barrel.

Oak Infusion Spiral Product Spotlight: Big Roast Blend

Using a process similar to what The Barrel Mill applies in whiskey barrel production, each Big Roast Blend Barrel Pack contains up to three spirals in the pack that are flame-finished after convection oven toasting to create a charred top layer over a medium-toasted core. The char layer contributes a charcoal note on the nose and palate that can complement some lush, dark red wines such as:

  • petite sirah
  • petit verdot
  • cinsaut
  • norton
  • mourvedre
  • syrah
  • tannat
  • pinotage
  • zinfandel
  • ruby cabernet

The Big Roast Blend is an American oak multiple-toast blend available in three levels of intensity of dark roasted impact, from mild (#1) to strong (#3):

Studies in wine and oak barrels have shown that toasted oak complexity does not come from wine penetrating into staves but rather from variations in the process of toasting the barrel next to an open flame. While a barrel's toast may be labeled as "Medium," the inside surface actually develops a gradient of temperatures when toasted. It is this gradient that creates a subtle variety of toasted oak aromas and flavors and a more interesting and layered complexity in the wine. American oak Big Roast Blend Infusion Spiral barrel packs replicate a barrel toasting gradient by combining one or more of our standard medium, medium plus or heavy toast levels with our proprietary fire-searing process that chars only a thin layer on the outer surface of the oak. The result is a dark, concentrated, tobacco-like character to support wines with a complementary aroma and flavor profile or to boost those wines in need of more individuality or substance.

AMERICAN OAK BIG ROAST BLEND INFUSION SPIRALS by The Barrel Mill are calibrated to treat 59 to 70-gallons. When inserted into a neutral barrel, the Big Roast Blend releases layers of fresh, new barrel, toasted oak aromas and flavors through a patented spiral-cut design that exposes an optimal ratio of cross-grain and parallel grain oak.

After six weeks, a broad spectrum of texture, aromatics and flavors -- from more mid-palate volume to a spicy mid-palate to a more distinct finish -- are virtually all extracted, rather than eight to 12 months typically needed for a new American oak barrel -- and at a small fraction of the price. 

As with standard Infusion Spirals, the Big Roast Blend barrel set consists of six individual spirals carved out of 9-inch long cylindrical segments of premium grade barrel stave wood, contained and linked together by a food-grade nylon mesh. The mesh also permits wine to freely contact all surfaces of each spiral. The innovative spiral design creates an optimal ratio of side grain and cross grain exposure of the oak, giving the wine extracted complexity in less time than any other thru-bung oak alternative. Each Big Roast Blend barrel pack is made with tight-grained American oak and is convection oven toasted to insure uniform depth of toasting in the spiral core and then briefly exposed to an open flame to form the char layer on the surface. Suggested Soak Time: 8 to 12 weeks.

Note: BIG ROAST BLEND Spirals are packaged in a six-Spiral set with a mix of toast levels. Because all six Spirals are not the same toast level, cutting mesh to achieve a lower overall oak dosage (lower oak impact) by reducing the number of spirals inserted into wine will create an unbalanced mix of toast levels. To get less oak impact, either blend down with un-oaked wine or apply a single toast Infusion Spiral barrel pack, such as medium or medium plus and then cut mesh to use fewer spirals.

Many winemakers will say that great wine is really made in the vineyard. Their job is simple: do no harm and let the grapes work their wonder. But the winemaker's role deserves more credit than just serving as a sort of chaperone for the grapes. Decisions are made almost daily along the wine processing continuum and it is the winemaker who navigates the journey that leads to greatness.

Throughout this ongoing winemaking activity, the possible application of oak arises almost any time. From fermentation to just weeks before bottling, this abundant resource with properties seemingly naturally created for winemaking is applied in all kinds of formats to perform one or more critical functions. The Barrel Mill, announces the addition of Spanish Cedar, Cypress and Sugar Maple to its choices of wood available for its Infusion Spiral line of alternatives to aging beverages in oak barrels. Natural oils and resins in Spanish Cedar (cedrela odorata), a species closer to mahogany than cedar, provide an aromatic wood that contributes primary characteristics of white grapefruit, sandalwood, white pepper and clove. It is a pink to reddish brown wood sourced from Central and South America and popularly known as "cigar box" wood for its distinct cedar scent and natural resistance to termites and decay. Cypress (Taxodium distichum), also known as Baldcypress, contributes primary characteristics of yellow cake, vanilla wafer and sponge cake. It is a yellowish brown wood sourced mostly from the Southeastern US Gulf states and commonly used for exterior construction and the boat industry for its durability and resistance to decay. Sugar Maple (Acer saccharin) also known as Rock Maple or Hard Maple, ranges in color from cream white to gold, sourced primarily from the Northeastern United States and Canada. This unique wood contributes subtle notes of maple syrup, with a soft sweetness. Additional hints of vanilla, caramel and bourbon pecan can also be detected.

Oak has been used in brewing for many years, but recently it has seen a resurgence of interest due to its large flavor impact on both wine and beer. In the past, the oak

flavors gained from storage in wood were considered to be a secondary benefit. Now, with the popularity of stainless steel fermenters and storage tanks, brewers and vintners alike are able to use these flavors as a creative addition to their products.

Barrel-aging beer has become immensely popular among commercial brewers, but the process is less common for homebrewers. Finding a barrel in the first place can be a bit of a challenge, and if you do happen to come across a barrel, there’s the inconvenient fact that barrels are 31 gallons. Those of us used to brewing 5- or 10-gallon batches will be hard-pressed to fill that 31-gallon barrel.

Fortunately, you don’t need to take up cooperage to give your beer that lovely oaky flavor you find in your favorite aged stouts. Manufacturers produce a wide range of products that are just the thing for homebrewers looking to infuse their brews with barrel character.

Types of Oak Products

Some companies do produce small barrels suitable for homebrewers. Expect to pay $200 or more for new barrels, or slightly less for used ones. What types of wines work best with the Infusion Spiral®?

80% of the wine used with spirals is red wine, the majority of which are Bordeaux and Rhone varietals. Our Bordeaux Blend French Oak barrel Pack was created specifically for Cabernet and Merlot, but works well with Syrah, too. For Chardonnay, our French oak Medium Toast has been very successful in aging and in fermentation.

 

What is the difference between French and American Spirals?

The French has a more subtle flavoring and a softer mouth feel. American oak typically has a bold aroma and more prominent flavor.

 

Will it hurt to leave the Spiral in longer than six weeks?

No, but after six weeks virtually all flavor is extracted. Additional time in wine improves integration. We have found best results to come between three and five months in wine.

 

What are the most popular toast levels?

Our top sellers are French medium, French medium plus and the Bordeaux Blend. Our American medium plus is also popular for richer wines such as zinfandel.

How do we come up with our dosage recommendations?

One barrel pack gives aroma and flavor impact of a new oak barrel. Dosages of single-toast barrel packs can easily be controlled by removing one or several spirals from the pack. Or, treat one barrel at 100% dosage, or higher, and then blend down with neutral wine to achieve your desired oak impact.

 

How long does it take to get the Oak Spirals?

Our products are shipped from stock, packaged in sealed plastic bags for freshness, and usually arrive in four business days by ground transport from our Minnesota facility.

 

How do I connect the spiral pack to the bung?

We suggest using a stainless steel eyelet that is screwed into the bottom of your normal silicon bung and using the included food-grade zip-tie to connect the end of the mesh bag to the eyelet. Or, you can order one of our bungs with an extended length at the bottom to wrap the zip-tie directly to the bung. Another option is to use about three feet of fishing line (20-30 lbs. strength) to tie to one end of the mesh and staple the other end on the outside of the barrel, next to the bung hole.

Bordeaux Blend Barrel Pack -- French Oak

 

Studies in wine and oak barrels have shown that toasted oak complexity does not come from wine penetrating into staves but rather from variations in the process of toasting the barrel next to an open flame. While a barrel's toast may be labeled as "Medium," the inside surface actually develops a gradient of temperatures when toasted. It is this gradient that creates a subtle variety of toasted oak aromas and flavors and a more interesting and layered complexity in the wine. Bordeaux Blend Infusion Spiral barrel packs replicate a barrel toasting gradient by distributing a mix of four different toast levels among six Spirals. Designed for Cabernet Sauvignon, Merlot and other medium body read and white wines, the result is a balanced quality on the nose and palate comparable to the aromas and flavors found in fine barrel-aged wines of Bordeaux.


BORDEAUX BLEND INFUSION SPIRALS by The Barrel Mill are calibrated to treat 59 to 70-gallons. When inserted into a neutral barrel, the pack releases layers of fresh, newbarrel, toasted oak aromas and flavors through a patented spiral-cut design that exposes an optimal ratio of cross-grain and parallel grain oak.


After six weeks, a broad spectrum of aromatics and flavors -- from more lifted fruit to a sweeter nose to a more lingering finish -- are virtually all extracted, rather than eight to 12 months typically for a new French oak barrel -- and at a small fraction of the price. Continued contact in wine beyond six weeks will further integrate flavors with wine and more rounded tannins will form.


As with standard Infusion Spirals, the Bordeaux Red Spiral barrel set consists of six individual spirals carved out of 9-inch long cylindrical segments of premium grade barrel stave wood, contained and linked together by a food-grade nylon mesh. The mesh also permits wine to freely contact all surfaces of each spiral. The innovative spiral design creates an optimal ratio of side grain and cross grain exposure of the oak, giving the wine extracted complexity in less time than any other thru-bung oak alternative. Each Bordeaux Red barrel pack is made from tight-grained Allier forest oak from France and are convectionoven toasted to insure uniform depth of toasting from edge to core.
