Innerstave is internationally recognized as the premier provider of new barrel oak alternatives. 

For more than forty years, the Innerstave team has helped winemakers around the world enhance the color, mouthfeel, structure, complexity, and aromatic support of their beverages through oak alternatives. Winemakers have used our products for decades to expand their oak spice rack flavor profiles, as well as reduce new barrel cooperage expenses by taking wood to the wine rather than wine to wood. 

In 1979, Innerstave initiated a paradigm shift in the wine industry by bringing premium new barrel oak flavor to wine through oak alternatives. Innerstave was created by one simple idea: build a system to replenish premium wine oak barrel flavors without needing to purchase new barrels every few years. The company is responsible for an entire industry of new barrel oak alternatives, also known as oak adjuncts, oak alternatives, oak add-ins™, oak integration systems and oak infusion products.

We source our oak alternatives from central France and the American Midwest. Our strong relationships with our American and French oak wood sources enable us to supply the highest quality products throughout our line from one year to the next. All our products are open air seasoned, toasted and produced at our facility located in Sonoma, California’s Carneros wine region. 

Innerstave is driven by the singular goal of assisting winemakers, brewers and distillers to achieve the new barrel oak flavor characteristics they seek by bringing oak to the beverage. Our convection oven toasting and premium oak sourcing allow us to create oak flavor profiles that are complex as well as consistent, year after year.

We have been working with the same trusted providers in central France for more than forty years. Our oak products are convection oven toasted rather than hand-fired, enabling us to provide consistent results for winemakers, brewers and distillers, year after year.


Revere Oak™ Honorably Aged 36 Months and Specialty Toasted

Revere Oak™ Medium Toast - Seasoned for 36 months and specialty toasted, providing characters and aromas of vanilla, caramel, brown sugar, baker’s spice, cinnamon, maple syrup, and chocolate, along with elegant, silky tannins.

Revere Oak™ Medium Plus Toast - Seasoned for 36 months and specialty toasted, providing characters and aromas of robust vanilla, dark chocolate, mocha, cinnamon, amber honey with oatmeal, roasted hazelnuts and smoke. This toast offers a full, creamy, velvety mouthfeel.

Revere Oak™ Plus Plus Toast - Seasoned for 36 months and specialty toasted, providing characters and aromas of dark chocolate, dark roast coffee, spice (clove, nutmeg, cinnamon), dark maple syrup, dark brown sugar, molasses, and slight smoky bacon. This toast offers depth and smooth, lingering tannins.


Premium French Oak

French Oak Untoasted - Provides rich, round, mid palate and sweetness, reduces vegetal characters.

French Oak Light Toast - Provides oak structure without being overwhelming, lifting the varietal’s attributes and allowing the fruit to shine. The flavors offer delicate sweetness, prominent oak spice, with a vibrant fruit-driven finish.

French Oak Medium Toast - Provides complex, pleasant and delicate toasted oak characters and aromas of vanilla, caramel, chocolate, hazelnut, oatmeal with honey, graham cracker, with a touch of cinnamon and nutmeg. The flavors offer sweetness, creaminess and roundness to the mouthfeel with a lingering non-aggressive toast character.

French Oak Medium Plus Toast - Provides complex, pleasant and well defined toasted oak characters and aromas of vanilla, toffee, butterscotch, chocolate, coffee, mocha, graham cracker, with a touch of nutmeg and clove. The flavors offer sweetness, creaminess and roundness and depth to the mouthfeel with a lingering pronounced toast character.

French Oak Plus Plus Toast - Provides complex, pleasant and well defined toasted oak characters and aromas of maple syrup, dark chocolate, coffee, nutmeg, clove, with a touch of smoked meat character. The flavors offer sweetness with a nice pronounced spice, creaminess and roundness to the mouthfeel with a lingering pronounced toast character.

American Medium Toast - Provides complex, pleasantly mild and delicate toasted oak characters and aromas of vanilla, caramel, chocolate, with a touch of coconut and clove. The flavors provide sweetness, creaminess and roundness to the mouthfeel with a lingering non-aggressive toast character.

American Medium Plus Toast - Provides complex, pleasant and well defined toasted oak characters and aromas of vanilla, toffee, butterscotch, mocha, graham cracker, with a touch of coconut, cinnamon, nutmeg and clove. The flavors provide sweetness, creaminess and roundness to the mouthfeel with a lingering pronounced toast character.
