CDR WineLab Webinar: Strategies for pH Management in Climate-Challenged Viticulture - Feb 20th

Join us for this complimentary technical webinar on Acidification Toolkit: Strategies for pH Management in Climate-Challenged Viticulture.

Thursday, Feb 20, 2025 9:00 AM - 10:00 AM PSTIn an era where climate change is fundamentally altering wine composition, managing pH and acidity has become a critical challenge for modern winemaking. The increasing occurrence of high pH wines with elevated alcohol content not only compromises sensory qualities but also poses significant stability risks.

This technical webinar provides a comprehensive analysis of acidification approaches, from traditional chemical interventions to innovative biological solutions. We will explore:

  • The chemical acidification techniques
  • Physical methods including ion exchange technologies
  • Biological acidification processes
  • Harvest timing strategies
  • Blending protocols

Speaker: Professor Antonio Morata, University of Madrid (Spain)

The WineLab is a robust, maintenance free LED photometric analyzer that can provide key analytical lab data in minutes.  Reagents and cuvettes are bundled together in validated test kits, which streamlines the chemistry - you only need to use a pipette!  Step by step instructions and results are shown on the screen, eliminating the need for conversions and calculations. The data can then be exported to USB in XML format for integration into most databases.

Do you know your Total Cost of Filtration?

To achieve the best process economics an efficient winery must operate on a Total Cost of Filtration basis. This recognizes that superior filter performance will yield better economics over time. Filter cost must consider total gallons throughput per change-out. A Total Cost of Filtration approach also realizes that factors influenced by filter performance are often more costly than the filters themselves.

2024 California Harvest Update | Troubleshooting for Winemakers

Many may agree the 2024 harvest crept up and seemed to appear overnight. For the past 2 years, California has had similar weather, with wet winters leading to cooler spring temperatures. This year, we are consistently seeing a lighter crop than last. The vines may be resting after a fruitful 2023 harvest following the heavy rainfall. 2024 has been slow and steady with cluster ripening inconsistently. The uneven ripening causes the sample to vary, making it difficult to make picks or create a plan of action once the fruit arrives to the cellar.

Gusmer is here to support you! We offer a handful of fermentation yeast that can assist in bringing out more fruit-forward characteristics from your varietal. Our non-Saccharomyces yeast like FrootZen (available in freeze dried or frozen ), Prelude and Concerto provide excellent bio protection and can offer a complex aroma and flavor profile.

Gusmer’s Oak-Mor (available in premium or toasted) can help mask and reduce green characteristics when used during fermentation.

ML Bacteria strains like Oenos 2.0 and CiNe are great tools to complete a clean secondary fermentation.

Whatever harvest throws at you, Gusmer is here to help!
