CLC Vasche Concrete Tanks:
Founded in 1955 and still privately owned by the same group of Italian families, CLC is a leading manufacturer for standard and tailor made concrete tanks for wine production, whose tanks can be found throughout Italy, France, Spain, South Africa and other important wine making countries throughout the world. The 20 HL CLC Diamante tank that is egg shaped inside allows for the constant stirring and mixing of the lees post fermentation and it’s practicality as a vessel is the reason it can be found in so many European cellars.
DAMY Imperial and BILLON Chauffe 180 min:
Following the success of Tonnellerie DAMY’s Light Long Plus Plus Toast that is abbreviated LL++ and close to an hour long but only on embers, Tonnellerie DAMY has created the DAMY “Imperial” barrel that is a blend of 3-Y seasoned Allier, Jura and Vosges staves with a proprietary 2 hour light long toast. After trials and requests in France, the purpose was to create a “chauffe a coeur '' toasting style where the entirety of the width of the stave is toasted but remains beautifully noisette colored. This style of toasting adds very subtle notes of grilled bread, spice and nuttiness to the wine while respecting the fruit’s purity and the vineyard’s terroir. In this philosophy, DAMY’s sister cooperage, Tonnellerie BILLON from Beaune has created a “Chauffe 180 min” which is a 180 min extremely light long toast only on small embers that can be applied as a unique toast to any standard forest. This style of toasting from BILLON will further allow the varietal’s characteristics to shine and enhance BILLON’s signature style of adding tremendous palate length to the wine.
