This master inventor has asked me to send you an email explaining his work. I am delighted to do so because he has eliminated from my life the three most annoying elements of small winery production.
If I punch down my T-bin at 8PM, then eat, sleep, and punch down again at 8AM, a temperature differential of 20°F causes yeast to retool, resulting in H2S stinkiness.
With GOfermentor's automatic punchdown feature, I can mix as often as I like. I can even leave town for a week and come back to perfect wine.
How I hate those kegs and carboys that store partial barrels. Besides their fragility, they are always under foot, and frequently go to vinegar.
With SmartBarrels, my partial barrels are stored in a bag-in-the-barrel alongside my full barrels. As I top, the bag collapses so there's never any headspace. Years later when I bottle, I simply recycle the bag and replace it with another $25 liner. Brilliant!
Between the barrel and the 1,000-gallon tank, there has never been an alternative to these nightmare monsters. There is simply no way to secure a wine under the floating lid of a VCT. They are impossible to seal. If you leave a headspace, you'll get a film. If you position the lid right on the wine, Acetobacter will grown throughout the seal.
With Smartliners, any quantity from 40 to 330 gallons can be sealed without a headspace. Throw that lid away and just use your tank for support. The clever perforated diptube permits racking of clear wine until nothing remains but lees. Glory Halleluia.

Guide to implementing the GOfermentor in your winery
GOfermentor was created by Meera and Vijay Singh. We started winemaking for ourselves and found the existing technology too tedious and environmentally unsound. Traditional winemaking is more janitorial work than wine making! You have to wash all the tanks before you start, then you clean all the equipment, then you have to wash the whole mess again when you are done. Punchdown is another tedious and dangerous process. The overwhelming amount of work led us to rethink the whole winemaking process, to optimize it so that it could be run by just the two of us. To our surprise, the new automated punchdown, build in press technology helped us extract better color and flavor. Our wines won awards, and others wanted to use the technology.
Dr Singh is a world-recognized biotech scientist, he developed the highly acclaimed Wave Bioreactor which revolutionized the production of biopharmaceuticals by using a disposable cultivation bag. He decided to apply his expertise in disposable processing to the key issues of winemaking. The patented GOfermentor and SmartBarrel wine aging/storage system was born out of this work.
