Tonnellerie Quintessence Announces the Launch of Premium Water-Immersion Barrel Hydro-Pure

BORDEAUX, France (Feb. 26, 2018) – Tonnellerie Quintessence is pleased to announce the launch of Hydro-Pure, the second water-immersed barrel in the Hydro Collection. The Hydro-Pure barrel debuted at the 2018 Unified Wine and Grape Symposium in Sacramento, California. 

Joining the Hydro-Dynamique barrel, first introduced in 2012, Hydro-Pure will enhance the Hydro Collection barrel series which continues to utilize the process established for water immersion while exploring more custom toasts.

During barrel immersion, water is constantly circulating resulting in accelerated tannin extraction, maximizing the amount of tannin that can be removed. 

“Hydro Pure continues the concept of using water in motion which prepares it for toasting in a way that will result in a softer mouthfeel,” Christophe Sauvaud, Directeur General for Tonnellerie Quintessence, said. “This new barrel will use an extended, low temperature toast making it perfect for fruit driven white wines.”

After immersion, each Hydro-Pure barrel is then toasted using a special process that builds on the minimal tannin impact of the barrel, focusing on a softer mouthfeel along with vibrant fruit, florals, softly toasted oak, balanced acidity and a subtle finish.

Perle de Quintessence Fermentation Barrel Presented at I+Q Event in Napa after Successful First Vintage in the United States

New fermentation barrel Perle de Quintessence is proving a success in the United States after its inaugural vintage in California, Washington and Oregon. More than a dozen wineries utilized the barrel during the 2015 harvest to ferment premium grape lots, and subsequently a trial sourced from Schweiger Vineyards was featured at the Innovation + Quality (IQ) 2016 event held at Charles Krug Winery in Napa Valley.


“Many premium wineries are using barrel fermentation to add richness and complexity while preserving balance and fruit character,” said Franck Renaudin, directeur général of Tonnellerie Quintessence. “Our mission was to support this effort by creating an eloquent barrel to highlight the fruit while also allowing easy access inside the barrel throughout fermentation.”


The barrel’s unique teardrop pearl shape and technical specifications were carefully designed in creative collaboration with a Grand Cru Classé in St. Emilion. Perle de Quintessence features a removable lid that hermetically seals, eliminating the need for any alterations to the barrel before, during or after fermentation. Meanwhile, the barrel’s shape ensures the pomace is located at the most conical and narrow section of the barrel. During pump-overs, the fermenting must passes through a larger volume of pomace, thereby promoting pomace-juice exchanges.


Dan Fishman, winemaker at The Donum Estate, confirmed the tasting notes match what the winery was seeking when introducing Perle de Quintessence to their Pinot noir barrel program for harvest 2015. “The palate is richer and more polished,” said Fishman. “Fermentation went more smoothly, with the wine going dry relatively easily, and we experienced a nice, smooth fermentation curve.”


Many winemakers are also using gas pressure to their advantage when fermenting in Perle de Quintessence to press the pomace against the juice, thus requiring less mechanical intervention.


“I believe fermenting under pressure is adding a new tool for the winemaker to use to achieve and gain in complexity,” confirmed Florent Merlier, winemaker at Van Duzer Vineyards in Oregon. Merlier is using Perle de Quintessence for Pinot noir. “I am seeing in the final product a higher degree of aromatic complexity as less esters and aromatics compounds are leached to the atmosphere. Wine made and fermented in Perle de Quintessence is fresher and shows a higher degree of red fruit aromas. Floral aromas are extremely elegant, texture and silky tannins on the mid palate highlight berry driven characters, and the wine finishes with length and precision.”

Tonnellerie Quintessence Welcomes Karen Prusinowski to its North American Team

BORDEAUX, France (Februrary 12, 2013) – Tonnellerie Quintessence is pleased to announce an addition to its sales team in North America.  Following the recent promotion of Elizabeth Van Emst to a new operations role, Tonnellerie Quintessence has hired Karen Prusinowski to serve as Account Manager for the Sonoma, Central Coast, Santa Barbara and Oregon territories. 

“Karen brings more than nine years of experience in sales and sales management, but most importantly, a passion for the wine industry,” said Franck Renaudin, Directeur Général. “This is an excellent opportunity for her to marry her personal passion with her professional expertise.”

Prusinowski recently completed the Wine & Spirit Education Trust Level 3 Advanced Certification with Merit and also has a bachelor’s degree in Marketing from Pennsylvania State University. 

“We are confident Karen will represent our Bordeaux-based cooperage with class, and we look forward to continuing to introduce her to the customers we serve,” said Renaudin.

Tonnellerie Quintessence Launches Premium Water-Immersed Barrel Hydro-Dynamique

BORDEAUX, France (February 24, 2012) – Tonnellerie Quintessence is proud to present Hydro-Dynamique,an elegant water-immersed barrel for aging the world’s finest wines.

“This name perfectly embodies the concept of our new barrel, which is centered on using water in motion to extract tannin from French oak,” said Franck Renaudin, directeur général. “Quercus petraeacontains up to ten times more tannin than American oak, Quercus alba.Our method reduces oak tannin and prepares the barrel for toasting in a way that will result in a softer mouthfeel.”  

During water immersion, Tonnellerie Quintessence continually circulates water to accelerate tannin extraction. The cooperage also uses a water filtration system to maintain an ideal environment for tannin extraction throughout the day.

“We’ve been developing a custom tank over the past year and are very pleased with the results,” said Renaudin. “We are building on the traditional water-bending process to take it to a new level of tannin extraction.  The combination of water in motion and constant filtration is proven to accelerate the extraction process and also ensures consistent results barrel to barrel.”  

After immersion, each Hydro-Dyamique barrel is then toasted using a special toast that builds on the minimal tannin impact and overall finesse of the barrel, focusing on a creamy, rounded mouthfeel along with fresh fruit, soft spice, minerality and a long finish.

“All of these qualities are well suited to the varietals we designed the barrel for,” explains Renaudin. “Hydro-Dynamique marries well with Pinot Noir and light to medium reds, as well as Chardonnay and certain styles of white wines.”

French Oak Stave Mill Celebrates 20 Year Anniversary

MONTHUREUX-SUR-SAÔNE, France (August 25, 2011) – Tonnellerie Quintessence is proud to announce the 20-year anniversary of its French oak stave mill, Merrain International.

“This is a significant milestone made possible by a vision years ago to secure a consistent, high-quality supply of French oak,” said Jean-Marc Pernigotto, Directeur Général. “By maintaining 100 percent control of our wood sourcing via our own stave mill, we are able to retrace our steps to determine the exact lineage from tree to barrel to winemaker.”

The mill’s story dates back to 1991, when the parent company of Tonnellerie Quintessence purchased a saw mill in northeastern France and converted it to a stave mill. Through the years, Merrain International has evolved into a technology and innovation leader within the stave mill industry.

“Our milling operation is centered on quality, traceability, sustainability and productivity,” said Pernigotto. “Our wood buyers take great care to select straight, tight-grain oak, and then we use our custom technology to mill it to the highest standards.”

In 2008, this attracted national attention with the visit of French President Nicolas Sarkozy. The stave mill’s reputation for quality was an important factor in the president’s decision to visit.

One of the ways the mill demonstrates quality is through the traceability of its wood source. Merrain International is certified by the Programme for the Endorsement of Forest Certification (PEFC), which guarantees sustainable sourcing, and also by Bureau Veritas for natural air drying. 

“We are pleased to announce that, as of this summer, Bureau Veritas is also verifying our wood origin,” said Pernigotto. “Bureau Veritas invited us to apply for wood origin certification due to our long-term history of maintaining excellent traceability documentation.”
