We are pleased to introduce a new concrete tank designed for both the fermentation and storage of wine. This dual purpose tank will provide several years of use and provide the unique flavor profile only concrete can offer. FERMENTATION These 200 gallon open top tanks are ideal and affordable for a small winery that wants to experience the nuances of concrete on a trial basis. Large wineries will find that these flexible tanks work well for experimental and small lots, often before committing to larger concrete vessels. STORAGE Obtain and retain the unique qualities of concrete by continuing the process all the way to the bottle. The Sonoma WineStack is designed to stack five high. Wineries are often short of floor space. When stacked five high, the 1,000 gallons will take the same footprint as 2 conventional barrels. You can actually see the wine circulating, and the shape of the top forces more of the cap to remain submerged. Concrete is Hatching Great Wines!

Yes, great wines are coming from eggs—concrete eggs to be exact. Here’s the story:

Back before Prohibition, many California wineries fermented their grapes in big, rectangular concrete tanks. Concrete worked well because the acid in the grape juice reacted with the cement used to make concrete, coating the inside of the tanks with a layer of calcium tartrate that was impervious to further penetration by the grape acids.

Prohibition destroyed the California wine industry, and it didn’t really recover until the 1960s and 70s, when a few wineries went beyond producing jug wines and started making better wines based on Bordeaux varieties and practices. Those old blocky concrete tanks didn’t seem proper for the new fine wines, and so vintners started using stainless steel fermenting tanks and then French oak for post-fermentation elevage.

Then a few years ago, Don Van Staaveren, winemaker at Three Sticks Wines in Sonoma, remembered that Europeans had for centuries used concrete fermenting tanks to make excellent wines. He contacted his friend Steve Rosenblatt, president of Sonoma Cast Stone, and the two developed a 500-gallon, concrete, egg-shaped tank. After a couple of years of trial and error, they offered the eggs for sale and got orders for a dozen eggs in 2011, 26 eggs  in 2012, and 54 orders and counting in 2013.

The concrete is slightly porous, allowing minute amounts of oxygen to reach the fermenting must inside. Because of the egg shape that narrows at the top, the rising bubbles of carbon dioxide from the fermentation are pressured to move more quickly, and this rush of gas within the must sets up moving streams within the liquid.

“When you look in when it’s fermenting, you can see it moving, like an ocean,” Rosenblatt says.

The constant movement of the must aids in the disintegration of the skins that releases flavor, aroma, and color compounds into the new wine.

Wineries are experimenting with these vessels at this stage, but if they like the results, we wine lovers may one day read a label that says, “Fermented in an Egg.”

As winemakers around the world are rediscovering concrete as a fermentation medium for ultra-premium wines, a concrete manufacturer who just happened to be in the heart of the California Wine Country, began collaborating with winemakers there to design the ultimate concrete wine tanks.

Steve Rosenblatt had been producing some of the finest architectural concrete fixtures on the market for more than ten years when he was approached by a winemaker friend about the possibility of developing concrete wine tanks. Rosenblatt, himself a vineyard owner, took a fresh look at the ancient, egg-shaped vessels from antiquity.

A number of options and accessories are offered to suit the winemakers style and budget, and the tanks themselves (above) are deceptively simple in appearance. For strategic reasons to do with tank strength and wine purity, the concrete on the inside is different than the concrete on the outside. Also, a complex weave of tubing hidden within the concrete supports a glycol temperature control system unique to the Sonoma Cast Stone tanks. The tank shape itself compresses the grape "cap" into the fermenting wine and permits autonomous circulation of the wine during fermentation. Winemakers claim that they can see the currents move.

Winemakers will also tell you that concrete gives them the best of oak and the best of stainless steel without the drawbacks. Wines fermented in concrete have the depth, complexity and mouthfeel of oak but without any imparted flavor. Thus, the fruit in these wines is more pure and more intense, and that can even be seen in the color. Wines made in concrete are consistently favored in blind testing, and concrete tanks even provide many more fermentations than oak, giving a better return on investment.

The new larger concrete tanks include our exclusive uniquely designed concrete lid.  The size of the tank requires a large lid which would normally be in stainless steel, our concrete top provides efficiency.  Stainless Steel would be very heavy and cumbersome to lift and move out of the way.  Sonoma Cast Stone's lid design has a counterweight system making it very easy to lift and the lid is hinged allowing the lid to lay back out of the way for easy access.  The lid can be installed in multiple directions so it can open from the front of the tank and the lid will rest towards the back or it can open from either side resting in the opposite direction depending on the winery layout and accessibility needs.  The lid is also an aesthetic element to the overall design of the tank.

One stated benefit of the egg is that as the fermenting wine rolls through the tank (remember that both alcohol and CO2 are being produced during fermentation) there are no “dead” spots in the tank and the temperature of the fermentation is consistent throughout the egg as is sugar and chemical composition of the wine.

Another stated benefit of the egg is that you don’t have as much “reduction” as other fermenters which means the wine is less likely to develop “eggy” (seems a bit ironic!) characteristics. Somehow this concrete egg mixes enough air and oxygen into the fermenting wine to prevent the formation of those reduced characters.

We will continue our egg experiments with fermenting white wine this year especially in the area of lees contact where even-mixing and minimal “reduced” character will be a benefit. Look for the egg to be in action with our first Pinot Grigio in September.

There are a lot of NEW releases and NEW wines in the Okanagan this spring. But nothing as NEWsworthy as the announcement of Okanagan Crush Pad’s newest arrival.

What is the ultimate symbolism of NEW? The egg.

New beginnings, birth of a new era, a new living thing. Summerland’s Okanagan Crush Pad Winery is the first and only winery in Canada to use egg-shaped temperature-controlled concrete tanks for winemaking. They’ve ordered 6 of these concrete fermenters after much study, and on the trusted advice of renowned winemaker Alberto Antonini. Okanagan Crush Pad’s consulting winemaker, Antonini has a history of working with concrete in Europe, where the practice of fermenting wine in oval shaped amphora goes back to the beginning of winemaking history. Okanagan Crush pad, first winery in Canada to use egg-shaped concrete fermenters from Sonoma Cast Stone

Okanagan Crush pad purchased 6 egg concrete tanks to use in the fall of 2011. OCP researched into purchasing these unique fermenters at the urging of consulting winemaker, Alberto Antonini.  "Concrete has been used for centuries in wine making.  The egg shape (which has temperature control tubing within the concrete) allows the flow of the fermenting wine to follow a circular circuit meaning the skins and pulp stay submerged by the must pumping over naturally. Concrete also is slightly porous, letting the wine breathe, like oak barrels, but not impart any oak flavour. The result of these two features, the result is wines with brighter and higher fruit notes and pretty secondary aromas that would not not find in wines fermented in stainless steel". Click here to read more

The impetus for the use of the concrete tanks at Okanagan Crush Pad came from Alberto Antonini, their Italian winemaking consultant.

“Last summer we were looking over the winery plans with Alberto,” Michael remembers. “He is very quiet as he looks through the blueprints and he says, ‘These round things, what are those?’ I said: ‘Those are the tanks’. He asks what are they made of. Of course, I say, they are made of stainless steel. He said ‘I have an idea’.”

When Alberto began making wine years ago in his family winery, he was an advocate of stainless steel, having accepted that concrete tanks are not sanitary. After strenuous argument, he talked his father into replacing the winery’s concrete tanks.

“My father passed away a few years ago but if he could listen to me now, he would say I told you so,” Alberto says. His professional experience had turned him against stainless steel for the production of anything but “industrial” wine.

“Concrete is a nice environment,” he argues. “When you smell an empty concrete tank, you smell life. You smell something which is important for making a premium wine. If you do the same with a stainless steel tank, you smell nothing. You smell death. To me, the making of premium wine is about life, it is not about death.”

The egg-shaped fermenters have heating and cooling coils inside the four-inch thick walls for precise and even temperature control. The shape improves the contact between the wine and the lees while the production of carbon dioxide during ferment keeps the fermenting must moving gently.

“There are divine geometries, whether it is the Roman arch or the pyramid,” Michael believes. “The egg is a divine geometry. The movement of the wine against the lees is very important.”

Alberto also contends that fermenting with wild yeast succeeds better in concrete. As for sanitizing concrete, he believes that hot water is sufficient.

“I don’t want to kill anything” he says. “What you kill is what you lose. Premium fruit only brings good little animals into the facility. I want to keep them inside the facility and I want to create a natural environment. Concrete helps a lot to do that.”

COMMENT FROM WINEMAKER ON USING SONOMA CAST STONE CONCRETE EGG TANK

We at Thomas George Estates purchased 4 concrete eggs from Sonoma Cast Stone in March of 2010, and received them just in time for the 2010 vintage. Three of the eggs were used for Chardonnay fermentation and aging, and one was used for fermentation on a Pinot and a Syrah. I am extremely impressed with the quality of wine from each of the eggs. The Chard has aromatically more forward fruit with a much richer mid-palate compared to stainless steel, neutral, or new French oak. We are in fact bottling a separate ‘concrete’ chard. The reds stabilized more color, and as well have a more rich mouth-feel.
I believe the concrete is very important for the micro-oxygenation of the wine not just in primary, but also for the aging. I believe the egg shape is maybe more important for the Chards (due to lack of skins) and the juice’s ability to effectively ‘stir itself’ during fermentation. You can actually see the current of the fermenting juice lifting off the edges and folding into the middle.
I have done side by side analysis of concrete, stainless steel, neutral oak, and new oak on all these wines, and in all blind tastings the concrete egg samples received the highest rankings.

Concrete Tanks Make a Comeback
Winemakers explore alternatives to stainless steel and oak

In the rush to modernize wine production in the 1960s, stainless steel tanks for wine storage and fermentation became the vessels of choice for most winemakers. Old wooden uprights, whether of oak or redwood, were abandoned or became tasting room curiosities. Concrete tanks and vats also went into the enological trash heap.
Recently, winemakers have been taking a fresh look at concrete tanks, some thinking that perhaps they threw out the baby with the bath water. Maybe there was something to be said for a winemaking tool that had been used for centuries and is still fairly common in Europe and parts of South America.

Charles Thomas, now director of vineyards and winemaking at Quintessa in Napa Valley, is a modern-day concrete tank pioneer in California. He first used them in 2003, when he was the winemaker at Rudd Vineyards & Winery in Napa Valley.

 "In the 1970s and 1980s in California, concrete tanks were associated with larger and older wineries, mostly producing inexpensive wines." Thomas said. "In a winemaking era that valued modern technology, concrete tanks were decidedly low-tech and out of fashion. But I remember visiting several of these wineries in the very early 1980s, including Brad Alderson at Robert Mondavi Woodbridge (now Woodbridge by Robert Mondavi), and remarking how fiercely loyal the winemakers were to their large open-top concrete red fermentation tanks."

Thomas also visited many cellars in Burgundy and Bordeaux, and realized that some of the world's great wines were being fermented in small (800- to 2,000- gallon) concrete tanks.

"In 2002 when I started at Rudd Winery, we were deciding how to replace some older stainless tanks in part of the original cellar," Thomas recalled. "On a scouting trip in France and Spain, I spoke with a number of winemakers who had experience with concrete, wood and stainless, and I (finally) became convinced enough to seek out the top tank producer in Burgundy - Nomblot - and import some tanks and ‘eggs' for the 2003 harvest. I brought concrete tanks to Quintessa in 2008." Artisan Barrels of Oakland, Calif., supplies the tanks.

At Quintessa, there are seven cement red fermentation tanks ranging from 1,000 to 2,000 gallons, and six 165-gallon egg-shaped concrete vessels, which Thomas uses for sauvignon blanc. He said he expects to add more tanks and eggs in the future.

"For the whites, the slight porosity of the concrete gives the richness of a barrel fermentation, but without the oak," he said. "Fruit aromatics stay pure, but with more complexity than in stainless steel. In the larger tanks, there is a slight ‘micro-aeration' effect similar to what we see in a wood tank. The fermented wine is slightly more accessible than wine fermented in a stainless tank. This slight difference persists through barrel aging."

Another plus for Thomas is taking care of the empty tanks. "A small open-top concrete tank does not require the extensive care that an empty wood tank needs. Wash it, rinse it, and then leave it open," he said.

NEWER CONVERTS
Steve Edmunds of Edmunds St. John winery in Berkeley, Calif., became interested in concrete tanks about 20 years ago while tasting wine in France. In 2009, he got his first concrete tank, from Vino Vessel in Paso Robles, Calif. (he also represents the company).

"Pluses include temperature control, no taste of wood obscuring fruit character and no reductive tendencies, which I have found in stainless," he said. "The wine is naked in concrete, so the fruit needs to be really good."
Edmunds cured the concrete using a 30% tartaric acid solution until there was no further reaction between the acid and the calcium in the concrete. This was followed by a water rinse. "Concrete won't do well with water above about 108°F, and pressure washing will wreck the surface, so cleaning needs to be done with consideration for those issues," he said. "When the tank is empty, it's important to let the inside dry thoroughly, giving it plenty of ventilation to prevent any possibility of mold."
While some vintners have their concrete tanks lined with epoxy, as in years past, those making higher-end wines today prefer the porous quality of unlined tanks.

Chris Russi, winemaker at Thomas George Estates in Sonoma County's Russian River Valley, said he first became interested in concrete tanks when he worked the vintage in 1997 in the Barossa Valley of Australia.

"There are many concrete tanks in Australia and at the time, a few wineries were rediscovering the benefits of concrete for both fermentation and storage," Russi said. "They claimed the wines had more fruit expression and a greater richness. The down side, though, was the difficulty cleaning. I was working harvest, so it was occasionally my responsibility to clean them - and it wasn't easy. In fact, I think it was the most hated job in the cellar."

Despite that, Russi said he believes the benefit to the wine makes cement worthwhile, and he has ordered four tanks for the 2010 harvest from Sonoma Cast Stone in Glen Ellen, Calif. "I ordered three of the tanks without a bottom door, and I plan on using them for fermentation and storage of chardonnay," he said. "Thomas George Estates now owns three vineyards. My goal is to have a concrete egg of chardonnay from each one." The fourth tank with a cleanout door will be used for pinot noir.
"The concrete eggs will be another tool for us, a breathable tank (like a barrel) with no oak influence," he added.

Sonoma Cast Stone went into production with its 500-gallon, egg-shaped tanks in early 2010. Until then, the "eggs" had only been available from European producers.

Terry Reap, director of winery sales for Sonoma Cast Stone, said the thermodynamics of the oval shape lead to the deposit of the lees across a larger floor area and prevents the need for stirring. The eggs can be ordered with an optional pomace door to make cleaning easier than it was for Russi in Australia.

The interior of the tanks is made from traditional colorless concrete, produced using chlorine-free water, while the outer shell is composed of EarthCrete, which Reap described as "a revolutionary new FiberCast concrete that is both environmentally sustainable and extra strong."

Josh Beckett, winemaker at Peachy Canyon Winery in Paso Robles, used a concrete tank for the first time in 2008. "I find a lot of positives," he said. "The temperature retention is unbelievable and stays very consistent. You don't get extreme spikes. Also, the wine is extremely pure. There are aromas, especially in fermented reds, that I had not noticed before. Also, it is nice to ferment the whites and leave the wine on the lees for as long as you want."

Beckett uses an oval and a larger upright cement tank from Vino Vessel. "The upright allows for good juice-to-skin ratio for punching down and good juice extraction with the reds," he said. "With white wine, you get a convection effect in the oval for self-lees stirring."
Beckett has fermented viognier, grenache blanc, zinfandel and petite sirah in concrete and said he has found no negatives yet. He even found cleanup easy. "Most people, including myself, assume that the tank and its roughness would make it tough to clean, but it really is easy. Rinse out, citric-wash, rinse out, and you're good, as long as your winery is clean and the wines are clean," he said.

INCREASED DEMAND
Micah Utter, president of Vino Vessel, said his company has been making the tanks for four years and business has doubled each year. "And it's going up again this year," he said.

Concrete tanks are somewhat more expensive than stainless - Russi of Thomas George Estates estimated that concrete tanks can cost up to twice as much as stainless - but Utter pointed out that it isn't really fair to do a price comparison. "The concrete tanks contribute to the flavor profile of the wine," he said, "and stainless steel does not."

Vino Vessel makes four tanks: the Pyramid, with a 150-gallon capacity; the Oval, with a 970-gallon capacity; the Hippo, with a 270-gallon capacity, and the Cube, with a 942-gallon capacity. Tanks can also be custom-made, Utter said.

The different shapes add to the winemaker's ability to fine-tune the wine, Edmunds said. "The Pyramid maximizes lees surface for extended contact and therefore more lees influence on flavor," he said. "The Hippo maximizes skin surface in contact with liquid, potentially increasing phenolic character. The larger tanks tend to reduce those kinds of impacts, but are more practical for larger volumes."

Because concrete is porous, there is some concern about contamination from Brettanomyces. However, the winemakers contacted for this article said this was a non-issue, as long as proper procedures are followed to keep the spoilage yeast out of the winery and the tanks are properly cleaned.

MANY TANKS
Alan Viader has used concrete tanks for fermentation for five years at Viader in Napa Valley, including 1,000-gallon cube tanks and smaller egg tanks. The tanks are made by Nomblot in France.

Viader said the tanks have many advantages. "Wines come out brighter and with much higher fruit notes and prettier secondary aromatics that you don't tend to see in wines fermented in stainless," he explained. "Our tanks are 8-feet square and offer a perfect ratio for maximum extraction and surface contact with the cap. They are rated at 6 tons, but on average, I fill them up to 3-5 tons. This makes the cap very thin and easy to punch down by hand. My maceration times are shorter and extraction occurs more quickly because of the surface area."

He has used the tanks for the winery's petit verdot, tempranillo, syrah and smaller cabernet sauvignon lots.
"The fermentations usually start on their own with the native wild yeast sooner in my concrete tanks than in my stainless tanks," Viader added. "Sometimes fermentation starts two to three days into the cold soak, whereas I can go up to eight-plus days in the stainless. Unlike stainless, there is the possibility of having natural yeast hiding in the pores and cracks of the concrete." Those "hidden" yeasts could lead to a jump start for the fermentation.

On the down side, Viader said the tanks can never be cleaned as completely as stainless. "But then again," he said, "neither can wood barrels."
Adding more concrete tanks is definitely in Viader's plans for the future. "I want to focus more on smaller lots and smaller fermentations, and these tanks are the perfect size."
