Total Sulphite in wine

During wine making sulphur is used as an essential additive as it plays two important roles as an anti-oxidant (prevents enzymatic browning) and anti-microbial (protects against wine spoilage) preservative in its free form. It can have an inhibitory effect on all yeast strains especially ‘wild’ strains as well as effecting malolactic fermentation by MLF bacteria in high doses.  

Due to SO2 becoming inactive when it binds with colour pigments of wine and the increased awareness of the effects of sulphites together with the prevalence of sulphite intolerance in some individuals, it has become valuable for wine makers to measure both the free and total SO2.  For these reasons, legal limits have been set for maximum permitted levels of SO2 in wines.   See table below:

Naturally occurring levels of SO2 in wines are usually found around 10-20mg/L.  All wines containing sulphites greater than 10mg/L must have a statement added to the label making the consumer aware that sulphite in present. 

As a result, Randox Food Diagnostics has developed a test kit available for manual, semi-automated and automated analysers to test total sulphites in wine.

Developed for medium to large-sized wineries, the RX Monaco system can perform up to 170 analyses per hour with results beginning in less than 13 minutes. The Monaco test menu includes: acetic acid, copper, ammonia, ethanol, glucose/fructose, iron, lactic acid, malic acid, potassium, total antioxidant status (TAS) and total SO2. Available this June will be Citric Acid and NOPA.

Cost effective and reliable analysis of beverage antioxidant activity

Antioxidants present in red wine, tea, fruit juices and other beverages are known to give cardio-protective effect. The Randox Food Diagnostics Total Antioxidant Status (TAS) kit provides beverage companies with a useful tool to evaluate the phenolic content of their products by measurement of its antioxidant activity.   The variation in phenolic composition is thought to account for the flavour, taste, colour and odour of different beverages.

 

Research shows levels of TAS are heavily present in red wine followed by tea, whilst other beverages indicating significant levels of antioxidants include cranberry juice, apple juice and coffee.

Total Antioxidant Status (TAS) Kit


Antioxidants present in red wine, tea and other beverages have been shown to give a cardio-protective effect. The compounds in beverages which contribute to this effect are Phenolics, of which Polymeric Phenols are the largest subgroup. Phenolics in beverages undergo many chemical reactions during processing and storage and the variation in phenolic composition is thought to account for the characteristic flavour, taste, colour, odour and quality of different beverages.
