About Us

Juclas
Wine. A world where everything is new.

JUCLAS was established in 1990 based on an idea of the owners of Enologica Vason, a company which is always searching for the best to offer its customers; it arose out of the need to find important and safe plant solutions to the problems involving the food and in particular the wine-making industries. JUCLAS is a young company, with a sizeable R&D department thanks to which the company designs and creates innovative technologies, with special attention given to those aspects related to qualitative improvement, energy saving and respect for the environment. JUCLAS has recently invested in human resources as a means of expanding its possibility of satisfying its customers who are increasingly more attentive to the quality of the services we offer. We have achieved this by adopting an organizational approach and model which is much more flexible and effective, thanks to a group of professionals who pool their individual creativity in order to obtain the best results.

Our company consists of a technical office which works in strict collaboration with Research and Development, making the most of upgraded design systems to construct pilot plants representative of the technical ideas that have to be tested in an experimental stage; a manufacturing department, capable of producing in compliance with the strictest standards set by the food industry; lastly, a sales office, always prompt in reporting the varied and individual requirements of our customers to the technical office.

Today JUCLAS can be considered a leader in its sector as many of its techniques presented on an industrial scale have already become standard use in wineries. These must include clarification in continuous mode by means of flotation, cross flow filtration, microoxygenation of musts and wines, tartaric stabilization of wines by means of ionic separation on membranes otherwise known as electrodialysis technique now extended to all kinds of wines, including doc and docg and a very wide range of cold biological stabilization systems which function by filtration on microporous membranes. Contact us, we are sure that we can provide you with original, individualized solutions and you have the guarantee of unique technical support (for example the tele-assistance by web), supplied by a team of real specialists in the food industry.

Is the Rising Price of Tartaric Acid getting you down?
02 July, 2018

Due to increasing global demands, there seems to be no end in sight to the rapid increase in price for tartaric acid. But you have another option! Save time and money with our MasterMind pH Demineralization System for musts and wines! Available in both semi-automatic and automatic versions, this machine uses cationic resins to reduce pH and dial in on the exact pH you want in your wine. Just say no to more tartaric acid additions and yes to precision pH management!

How it Works

The MMPH system removes cations from the musts or wines being treated by means of ion exchange resins. You can treat a portion of the wine and blend it back in for small pH adjustments. The process removes potassium, calcium, magnesium, and sodium and reduces pH between 0.1 and 0.3 points.

Features:

  • Compact Design
  • Stainless Steel Frame
  • High-quality sensors and accessories
  • Sanitary and Food-grade certification

Available for lease or purchase from JUCLAS USA, contact us today for more information!

DIALING IN PRECISION GAS MANAGEMENT WITH JUCLAS' NEW MASTERMIND REMOVE PLUS SYSTEM
12 March, 2018

JUCLAS is proud to announce the release of their new gas management system, MASTERMIND® REMOVE PLUS, which allows the winemaker to remove dissolved oxygen from wine - as well as the addition or removal of dissolved CO2 - without having to sparge. This fully automatic, membrane-based process is done in a closed system so no outside oxidation or loss of aromatics occurs.

The MASTERMIND® REMOVE PLUS system was designed to take real-time, in-line readings of the oxygen and carbon dioxide concentrations in the wine. The operator programs a desired output gas level, to which the machine will adjust the internal parameters automatically using special gas exchange membranes to realize the preprogramed gas levels.

“It makes a huge difference when it comes to the aromatics of the wine. With sparging, a large portion of the favorable aromatics in the wine can get blown off with the oxygen, while in our system, it is done without nitrogen contact so the aromatics stay where you want them, in the wine,” says Logan Fleming, the Technical Sales Manager.

A second possible use for the MASTERMIND® REMOVE PLUS system is to sweet spot your carbon dioxide concentration.

“By being able to sweet spot the CO2 levels, you not only get a completely accurate reading in the wine, but also the perfect lift to the aromatic levels you desire in your wine.”MMRPLUS

The MASTERMIND® REMOVE PLUS system also has the ability to gently reduce the alcohol concentration of a wine. This versatile system, capable of fine tuning multiple aspects of a wine, will grant much more control over the aromatic and flavor profile of your wines.

JUCLAS, the US equipment arm of the VASONGroup, is successfully delivering innovation and outstanding customer service from their offices based in Napa, Ca.

JUCLAS offers a wide variety of equipment and services including the clarification of must, wine and lees, by means of both floatation and crossflow technology, as well as equipment for micro oxygenation, pH adjustment, reverse osmosis, yeast rehydration, lees filtration, gas management, and small lab equipment for testing both filterability and tartrate stability.

Their technical office in Napa pairs a strong R&D/manufacturing department with a sales and mobile filtration division to guarantee all client needs are met with superior customer service.

SO YOU’VE GOT BOTRYTIS - NOW WHAT?
11 September, 2017

With the wet Winter, Spring, and late Summer rains come the oh so fun challenge of dealing with rot and compromised fruit specifically the dreaded Botrytis.Worry not - ENOLOGICA VASON together with BSG  and JUCLAS USA have the adjuvants you need to combat the problem.  Proper enzyme and tannin management will alleviate the off-putting sensory and organoleptic properties due to the compromised fruit as well specifically stabilize white wine from oxidation & bitartrate precipitation.

MANNOZYME® is a beta-glucanase enzyme compound that specifically breaks down glucans in wines obtained from Botrytis affected grapes.  By breaking down the glucans you can now move on to clarifying/filtering the must/wine.  Mannozyme® has a very interesting characteristic as its lysogenic action released yeast substances into the must/wine and increases the mannoprotein content. These macro-molecules give sensorial “thickness” to the wine and exerts a strong stabilizing action on the protein and potassium bitartrate.

PREMIUM STAB® is derived 100% from GALLA tannin source and works exceptionally well for treating wine in need of greater resistance to oxidation and a more rounded structure.  Has excellent color stabilizing properties for red wine due to the bonds Premium Stab® forms with the anthocyanin released during primary extraction phases.  If added early in the process Premium Stab® forms stable color complexes.

We have stock and are ready to handle your needs and solve your harvest problems!

ILLUSIVE White Elephant Crossflow Filter Found! JUCLAS Unit Capable of Filtering PREMIUM Barrels and BULK Lots.
08 May, 2017

As a winemaker or GM, do you ever find yourself asking "why can't I have a versatile crossflow that will filter my Premium barrel boutique lots AND my 20,000 gallon tank of Sauvignon Blanc?" If the answer is YES -- then you need to call JUCLAS USA immediately!  The brand new filter just arrived in our Napa warehouse and is available for sale, rental, lease, or mobile service.

MFTC 02-04

Due to the engineering brilliance of Technical Sales Manager, Logan Fleming, the JUCLAS Crossflow (MFTC) has been modified in such a way that it can now close off membranes in order to minimize losses while filtering those high end wines.  Less losses equals more product available for sale.  More product available for sale means more revenue. More revenue means more profit. And more profit means a happier boss and winery owner.

On average, this 2-4 hollow fiber membrane unit can run in automatic (CIP included) for 12 hours, and process about 1,000 gallons per hour.  It works on extremely low pressure, has minimal O2 pickup, and fully respects the organoleptic properties of your wine.

SUCCESSFUL Floatation Seminar and Trial at Fresno State Winery with the Winemakers of Tomorrow -- GO BULLDOGS!
30 August, 2016

SUCCESSFUL Floatation Seminar and Trial at Fresno State Winery with the Winemakers of Tomorrow...

On Thursday August 25th at Fresno State Winery JUCLAS USA gave a floatation technology seminar to 30 future winemakers.  Logan Fleming, technical sales manager, and Susan Owen, operations manager, spent the day with the students with a lecture based talk as well as time in the winery completing a real world floatation trial.

FRESNO STATE FLOATATIONThe Fresno State students, along with their head winemaker and department professor Matt Brain, hand harvested estate grown Barbera grapes the previous night.  Professor Brain and students pressed the fruit themselves and dedicated 250 gallons for their 2016 estate Rose.  The floatation took place using a JUCLAS EasyFloat 300 and the VASON adjuvants for flaotation: Flottogel, Flottozima, and Flottobent.  Students had the opportunity to intereact with a technology that they had not previously been exposed to. Katie, a graduating senior from Wisconsin, said she "has heard other people and winemakers talk about floatation at her internship, but that she hasn't had a chance to experience it first hand before".

FLOATATION SAMPLES

Susan Owen, as an alumni of Fresno State, "felt honored to be able to give back to her university through technical support and educating the future winemakers of our industry.". Logan Fleming, an alumni of Cal Poly, was "quite surprised with the Fresno State's cellar setup, and didn't know before this experience that the university possessed a fully functioning winery."

Fermentation and Sensory Analysis students interacted with the Easy Float 300 equipment, learned what it means to have a specific products designated for floatation, and took part in the operation and successful floatation of the 250 gallons of Barbera Rose.

 Easy Float: Perfectly Clarifying Must

Discontinuous Mini Floatation Unit Used to Achieve the Desired Level of Turbidity in Real Time

Easy Float 500

Easy Float has been designed to carry out floatation during pumping over on tanks.  Gas dissolution takes place by means of a pump, through a stainless steel pressurising cylinder.  Its function is of the utmost importance: it acts as a dissolver, thus allowing for the aggregation of the flocculants with the gas and solid particles to be eliminated.  Easy Float can operate both with air and nitrogen, so it is suitable with traditional, hyperoxygenation, and reductive wine making techniques.  This system is equipped with an electrical board and boasts all the necessary elements for managing gas.  It is set for the installation of one or two pumps for dosing adjuvants.

Advantages Compared to Traditional Static Clarifying:

  • turn tanks faster
  • fewer adjuvants required
  • save on refrigeration costs
  • quick seperation of indigenous micro-organisms from the must
  • higher yield in terms of clear must thanks to the optimal lees consolidaiton
  • reduced quantity of lees to be filtered
  • possible to determine the desired must turbidity level in advance in order to manage fermentation processes more effecively

JUCLAS USA CROSS FLOW TECHNOLOGY HAS ARRIVED IN NAPA!
14 March, 2016

JUCLAS USACROSS FLOW TECHNOLOGY HAS ARRIVED IN NAPA!

MFTC

The most versatile filter system in enology.

The automatic bypass microfiltration on a hollow fibre membrane.

MFTC Cross Flow 10 Membrane

Advantages:

Membranes selected for their durability and economical price point

-     Absolute versatility for filtration of: musts, unrefined , clarified, and sparkling wines

-     Automation available for the smallest models

-     Optimal management of clogging by “balanced back flush”

-     Expandable, modular, and scalable models

-     Maintain a stable temperature during the process

The current market demands the development of economical filtration equipment that is capable of processing large daily volumes.  JUCLAS USAhas responded to these needs with the tangential filter MFTCthat has a new generation polypropylene membranes, selected to be inert towards the structure of the wine and for its extreme resistance to mechanical and chemical stress.  They are available in three types of filter cartridges (10, 15, and 20 m2)to form a complete range of MFTCfilters with modular and scalar extension.

In addition, the units can also be equipped with a single cartridge that is sufficient for small lots (up to 20 hL/hr for still wines) to meet the needs of the craft/boutique winery. With steel housing the equipment is also available for use with sparkling wines.

Cross Flow filtration (MFTC)is extremely versatile. What does that mean to you the winemaker?

This means that it optimally combines all the filtration needs of a winery: musts, wines after fermentation, and wine to be prepared for sale and packaging.  The quality of the process performance are excellent from the loading of the autoclaves to separation at the end of fermentation.

What are you waiting for?  Click here to visit our website and learn more.

Contact JUCLAS USAat juclas.usa@vason.it or (707).259.1877 to discuss this technology further.  We look forward to hearing from you!
