Filtration Processes - A Central Subject in Wine Production

Wine production is a science of its own and fills entire libraries. The subject is even taught at universities and colleges. It is therefore hardly surprising that not only the work in the vineyard is very important, but wine quality also depends quite considerably on the wine production.

With the export of wines to ever more distant countries, the market is calling for stable, clean wines that are free of ingredients that can trigger secondary fermentation (e.g. through the retention of yeasts) or other unintentional processes. But also wine drinkers who prefer youthful fresh and fruity wines place great emphasis on an absolutely clear, brilliant colour without deposit formation on the bottom of the bottle.

Previously wines were filtered with sieves and cloths. Today complex membrane filters are used for the safe removal of trub particles and microorganisms (Clarification filtration).

This kind of filtration is called cross flow or tangential flow filtration. In the process, the medium to be filtered is pressed through well-defined pores of a membrane by means of pressure. In this, high overflow velocity in the membrane module prevents clogging of the pores through the fact that the solids present in the medium are kept in circulation. During the filtration process, the concentration of the retained solids within the system rises to what can lead to blocking of the pores with different membrane models. Blocking also appears through formation of a gel layer. For the filtration of wine, an especially developed hollow fibre module with membranes has been proven to counteract blocking. 

Because the finest suspended particles (e.g. phenols, proteins, etc.) are still present even after filtration, in addition the wine is clarified. The oldest means for this are freshly opened egg whites, since these immediately bind these tiny clouded particles and thus prevent post-clouding of the wine occurring. Then remaining turbid materials can be adsorbed by means of alternative expedients such as bentonite, gelatin or activated carbon. The subsequent Clarification filtration removes socalled fining trub, as well as the yeast, thereby preventing secondary fermentation.

Another process step before bottle filling is the prefiltration of the cutting waste (Preliminary filtration) that is ready for bottling. This filtration step is used for the safe removal of particles and micro-organisms that can avoid secondary fermentation and exclude the activities of micro-organisms.

These different filtration processes are used not only for the microbiological stability of the wine, but also have a positive influence on the quality and optics of the wine.

Filtration with C-CUT Capillary Module for Microfiltration Makes Wine Taste Better

The main reason for wine filration is to clean it from residual particles, which in general means applying separation stages in different process steps, e.g. via C-CUT hollow fiber modules. Primarily, wine filtration is done to avoid progressing fermentation by remains of yeast in the medium (yeast separation). Further, progressing turbidity due to remains of proteins as well as the negative effect of wine inherent micro-organisms have to be avoided (fining / sterile filtration). In short: Wine filtration is required to achieve micro-biological stability and maintain perfect optical characteristics.

Burkert's modular multi-channel multiCELL transmitter/controller Type 8619 is a customizable measuring system with an extended range of functionalities that can work with multiple types of sensors. With this new variant, fluid technology specialist Burkert will extend the scope of their Type 8619 which has been available only for panel installation so far. Beginning in June 2014, there will be a new, separate housing version which will offer more flexibility in installation, for example on walls, railings or pipelines. The new variant can be supplied with a 12…36 VDC supply, as before, or alternatively with 110 / 230 VAC supply.

 

With MultiCELL transmitter/controller Type 8619, Burkert offers a complete and flexible measuring system suitable for connecting multiple sensors for the most diverse range of tasks in data logging, control and dosing. The device is perfect for numerous applications in areas as diverse as water treatment or the production of foodstuffs and pharmaceutics. The system consists of a basic device which comes with generous equipment, but whose functional range can be freely adapted and extended, as required, with hardware boards for pH / ORP, conductivity, input + output signal boards and software modules. Burkert's MultiCELL Type 8619 is now available not only in a version for panel installation, but also with a housing, offering users more flexibility in the installation of the device, e.g. on walls, pipelines and railings.

 

Sturdy housing with no external metal components

The new housing variant is protected according to IP65 / IP67, NEMA 4x. There are no external metal parts. With these features, the housing is perfectly suited not only for water treatment, F&B and pharmaceutics, but even more so for aggressive environments like for instance galvanising processes.

 

Installation on walls, pipelines and railings

Thanks to a special installation plate, the system is easily installed on walls; a special installation kit facilitates installation on pipelines and railings. A smart locking and support mechanism allows users to attach devices quickly to the installation plate - and remove them when required.

 

Electrical installation made user-friendly

Terminals and connections are all accessible from the front, making electrical installation easy and fast. There are up to five M20 cable glands for taking up and holding power and signal cables. Most importantly, the housing provides plenty of space for a comfortable installation of all cables required.

 

Flexible power supply - more freedom in the field

In order to better serve to the most diverse customer requirements and infrastructures, there is one version operating with 12...36 VDC, and another one with 110 / 230 VAC. If and when required, sensors can be supplied directly with 24 VDC, even in the 110 / 230 VAC version, directly from the MultiCELL.

 

Modular multi-channel MultiCELL transmitter/controller type 8619 - the whole portfolio

Burkert's MultiCELL devices for panel installation or with separate housing can be equipped with up to six different I/O boards in any mix, making them the equipment of choice for complex tasks.

What is more, the devices can handle up to six different functions in parallel operation, which may be selected, independently of each other, from a list. Frequently needed functions are already integrated. So you just have to select them and they will be fully available after parameter setting. What makes the functional flexibility of the type 8619 complete is the assignment of the functional modules to the various input and output signals.

 

Last but not least: There are retrofittable software packages for even more practical adaptations to the most diverse range of applications. For users, such flexible customisation capabilities can be a big cost saver because costs arise only for features that are actually needed and installed. With MultiCELL, Burkert provides an integrative system for a multitude of applications, from analytic measuring technology to flow measurement. What remains under the bottom line is a minimum of types & variants and, thus, a minimum of expense for employee trainings, storage and maintenance.

Introducing Burkert’s Full Bore Sanitary Magflowmeter

The sanitary full bore magflowmeter Type 8056 is 3A approved for the food and beverage industry. It comes standard with PTFE lining, 2x 316L SS electrodes, 304ss body and both analog and digital pulse output.  The meter consists of a magnetic sensor fitting Type S056 connected to an electronics Type SE56 (blind in compact version or with display in compact or remote version) is designed for applications with liquids with a minimum conductivity of 5 μS/cm. Combined with a valve as the actuating element, the complete full bore sanitary magflowmeter can control high-precision dosing operations and flow measurement in the food & beverage and pharmaceutical industries.

A few examples of food and beverage applications include a juice dispensing/batching application, an application monitoring filtered wine and the transferring of tomato paste in various plants around the country.

Bürkert develops pneumatic technology for high-precision dosing

The tasks involved in industrial process dosing are very diverse, but they all have one thing in common: high precision requirements. These requirements have to be fulfilled regardless of environmental influences. Bürkert now presents a new pneumatic system as a compact solution for this purpose.

Bürkert's patented pneumatic dosing system for fluids can be used in all applications that require dosing of defined sample quantities with maximum repeatable accuracy. Examples of dosing applications include vaccines, chemicals in industrial washing machines, flavourings in the beverage industry, pharmaceutical raw materials and dosing tasks in filling machines. The high precision is made possible by the use of pneumatics. The dosing system is actuated by means of pressure and vacuum, which provide substantially more power than conventional actuating systems. This power makes it possible to control the defined dosing quantity with a precision of ±2 %, largely independent of temperature and viscosity. The size of the dosing chamber defines the dosing volume per stroke. It can be between 150 and 750 µl.

Few components, many possibilities
The system, which features a high level of flexibility and numerous options for adaptation, consists of a controller and an exchangeable dosing chamber, which can either be attached to the controller or positioned freely. The dosing chamber consists of two media-contacting components, a plastic housing and a separating membrane. The use of high-quality materials such as PEEK and FKM or FFKM also makes it possible to convey very aggressive media. The chamber is self-priming and easy to flush. The controller supplies the membrane above the chambers alternately with either pressure or vacuum. This conveys a pre-defined quantity of media through the dosing chamber. Media can be conveyed in both directions. This makes the recovery of expensive media, for example, as well as mixing processes possible. Due to the separation of the controller and dosing chamber it is easy to replace the chamber. For single-use applications the dosing chambers are made of inexpensive materials. Depending on requirement, the are also available in sterile versions.
The controller of the pneumatic dosing system contains the on/off valves and the electronics. The system requires external compressed air. In the case of unpressurised media, vacuum must also be supplied. On request, the controller is also available with a completely integrated pressure and vacuum supply.

The Burkert Type 8045 is an insertion electromagnetic flow meter with analog output signal, digital outputs and input and display. The transmitter is suitable to measure aqueous solutions (conductivity more than 20 S/cm or also with solids) without moving parts.
