CHARACTERISTICS

LYSIS ELEVAGE is an enzyme preparation specially formulated to help with the maturation of wine. Its action is focused on polysaccharides, namely ß-glucanes contained in wine produced from botrytized grapes. It improves the filterability of these wines and likewise facilitates the glucane hydrolysis of yeast walls during ageing on lees.
